Ingredients:
Bitter gourds- 250gms
oil - 2-3 tbsp
Channa dal - 1 tsp
Cumin & Mustard seeds - 1/2 tsp
Curry leaves
Masala ingredients:
dry coconut - 1tbsp
peanuts - 1tbsp
roasted channa dal - 1tbsp
coriander seeds - 2tsp
cumin seeds - 1tsp
Gingely seeds - 2 tsp
Garlic - 5-6 cloves
Jaggery - 1tbsp (chopped)
salt to taste
turmeric powder - 1/4tsp
chilli powder - 1- 2 tsp (as per taste)
Method:
- Cut bitter gourds into 1' pieces and boil them
- Dry roast peanuts, coriander seeds, cumin seeds, gingely seeds
- Grind all the masala ingredients to make fine powder and mix salt, turmeric, red chilli powder to masala.
- Remove the seeds from bitter gourd pieces and hallow them
- Take small amount of masala and fill in the hallow of piece and lightly close it.
- Do it for all the pieces.
- Heat oil, add channa dal, cumin and mustard seeds, curry leaves and fry them for one minute.
- Add all the pieces gently and fry them in low flame till it cooked.
- Serve with rice.
