Brinjal and cucumber chutney

Ingredients:
Brinjal - 6 no' round
Cucumber - 1
green chillies - 10- 12
turmeric - 1/2 tsp
tamarind  - 1/2  lemon size
salt to taste
garlic cloves --4
cumin seeds - 1tsp
oil - 1tbsp
for seasoning; oil - 1tbsp, urad dal, channa dal, cumin seeds, fenugreek seeds, mustard seeds - 1/2 tsp each. red chilli - 1, curry leaves


Method:

  • Heat the oil and fry chopped green chillies, roundly sliced brinjals till cooked
  • Peel and cut cucumber into small pieces. remove seeds and keep aside
  • Grind all ingredients  except cucumber pieces to make chutney
  • Add cucumber seeds and grind once.
  • Lastly add cucumber pieces and mix the chutney well.
  • Heat the oil and add all seasoning ingredients fry till  mustard seeds crackles.
  • Then pour it on chutney
  • Serve with rice
