Ingredients:
Brinjals - 250 gms (tender and round small)
Onions -500gms
Green Chillies - 3
Cumin Seeds- 1 tsp
Garlic - 1 tbsp (Finely Chopped)
Curry leaves
Coriander leaves
Salt to taste
Turmeric - 1 tsp
Red chilli powder - 1 tsp
Oil - 2 tbsp
Method:
Brinjals - 250 gms (tender and round small)

Method:
- Finely chop green chillies, onions
- Slit the brinjal into four
- Heat oil in kadai, add cumin and curry leaves
- Add Onions, chillies, garlic and fry for 5 minutes
- Add brinjals, spices and mix gently.
- Close with lid and cook in very low flame until brinjal becomes tender (add little water if required)
- Lastly add coriander leaves.
- Serve with rice or roti
