Brinjal Gravy with onions

Ingredients:
Brinjals - 250 gms (tender and round small)
Onions  -500gms
Green Chillies - 3
Cumin Seeds-  1 tsp
Garlic - 1 tbsp (Finely Chopped)
Curry leaves
Coriander leaves
Salt to taste
Turmeric - 1 tsp
Red chilli powder - 1 tsp
Oil -  2 tbsp


Method:

  • Finely chop green chillies, onions
  • Slit the brinjal into four
  • Heat oil in kadai, add cumin and curry leaves
  • Add Onions, chillies, garlic and fry for 5 minutes
  • Add brinjals, spices and mix gently.
  • Close with lid and cook in very low flame until brinjal becomes tender (add little water if required)
  • Lastly add coriander leaves.
  • Serve with rice or roti
