BRINJAL AND BROAD BEAN CURRY

Ingredients:
Fresh brinjals - 150 gms
Broad beans - 150 gms
Tomatoes - 2
Onion - 1
Green chillies -2
Ginger garlic paste - 1 tbsp
Cumin seeds - 1/2 tsp
Mustard seeds - 1/4 tsp
Curry leaves
Turmeric - 1/4 tsp
Red chilli powder - 1 tsp
Salt to taste
Oil- 1 tbsp


Method:


  • Thread and cut the beans into small pieces
  • Chop the brinjals and keep in salted water.
  • Chop onions, tomatoes, green chillies.
  • Heat the oil in kadai, add mustard seeds, cumin seeds and curry leaves, fry till mustard crackles.
  • Add chopped green chillies, onion, ginger garlic paste and fry for 2 minutes.
  • Add brinjal, broad bean pieces and spices.
  • Add water and cook in low flame.
  • When beans are tender add tomatoes and cook another 5 minutes.
  • Serve with rice.
