Capsicum, Potato Curry

Ingredients:
Potatoes - 200 gms
Capsicum - 100 gms
Tomatoes - 100 gms
Onion - 1
Green chillies - 2
Ginger garlic paste - 1 tsp
Salt to taste
Red chilli powder - 1 tsp
Turmeric - 1/4 tsp
Coriander leaves - 1 tbsp (chopped)
Oil - 1 tbsp

For talimpu:
Dry red chilli - 1, urad  & channa dal - 1/2 tsp, Mustard & Cumin seeds - 1/4 tsp, Curry leaves

Method:

  • Finely chop onion, tomatoes, green chillies and capsicum. Peel and cut the potatoes into small pieces.
  • Heat the oil in kadai, add all the talimpu ingredients and fry for 1 minute.
  • Add ginger garlic paste, green chillies and onion and cook till onions are soft.
  • Then add chopped tomatoes, cook for 3-4 minutes, add capsicum and cook again for 3-4 minutes. 
  • Add chopped potatoes, spices, cook in medium flame for 2 minutes then add 1 cup of water and close with lid. Stir occasionally till potatoes are cooked and water absorbs.
  • Lastly add  coriander leaves.
  • Serve with rice, roti or puri.
