WHEAT CHOCOLATE CAKE

Ingredients:
Wheat flour - 100 gms
Sugar - 50 gms
Ghee - 50 gms
Cashew nuts - 1 tbsp (chopped)
Kishmish - 1 tbsp (chopped)
Cocoa powder - 2 tsp
Baking soda- 1 tsp
Apple - 1 (peeled and grated)
Grated Coconut - 1 tsp
Milk - as required

Method:

Take 1 tsp of ghee, fry cashew nuts and kishmish till golden. Remove and keep aside.Add remaining ghee, saute wheat flour in low flame, stir continuously till aroma comes.Grind sugar, apple and milk to make smooth batter.Stir wheat flour, cocoa powder, baking soda in batter.Grease tin with little ghee, pour the batter in it and top up with nuts, coconut and kishmish.Steam cook for 15 minutes.Remove and let it cool.



PALAK KHEER

Ingredients:
Milk - 500 ml
Spinach puree - 4 tbsp
Sugar - 100 gms
Cashew - 10
Kishmish - 10
Cardamom powder - 1/4 tsp
Ghee - 1 tsp

Method:

Fry cashew nus and kishmish in ghee and keep aside.Bring to boil the milk in thick bottom vessel.When it starts boiling add sugar, spinach puree and cook in low flame for 5 minutes or until sugar dissolves.Lastly add cardamom powder, cashew and kishmish.Serve hot or chilled.

స్పినాచ్ ఖీర్ (పాలకూర పాయసం)
కావలిసిన వస్తువులు:
పాలు - 500 ml
పాలకూర puree  - 4 tbsp
పంచదార - 100 గ్రా
జీడి పప్పు  - 10
కిష్మిష్ - 10
ఏలకుల పొడి - 1/4 tsp
నెయ్యి - 1 tsp

తయారీ:

జీడి పప్పు , కిష్మిష్ నేతిలో వేయించి పక్కన పెట్టుకోవాలి. పాలు వేడి చేసి మరుగుతున్నప్పుడు పాలకూర puree , పంచదార  వేసి బాగా కలిపి  5 ని ఉడికించాలి. చివరికి ఏలకుల పొడి, జీడి పప్పు, కిష్మిష్ వేసి దించాలి. దీనిని  వేడిగా కానీ చల్లగా కానీ వడ్డించాలి

CAULIFLOWER PULAO

Ingredients:
Cauliflower - 1 (small)
Rice - 250 gms
Salt to taste
Onions - 2
Ghee - 2 tbsp
Lemon  - 1/2

Masala:
Grated coconut - 1/2 cup
Green chillies - 12
Garlic pod - 1
Cloves - 4
Cardamom - 4
Cinnamon stick - 1/2"
Ginger - small piece

Method:

Grind all the masala ingredients to make fine paste using little water.Separate florets and parboil florets in salted water. Drain and keep aside.Heat ghee in thick bottom vessel, add chopped onion and fry till golden brown.Add ground masala, fry till oil floats.Add cauliflower florets, salt and rice. Mix well and fry for 2-3 minutes.Then add sufficient water and close the lid.Cook till rice is done and water is completely absorbed.Lastly add lemon juice and serve hot.      కాలీఫ్లవర్ పులావు

SWEDISH JELLY SLICES

Ingredients:
Sifted all purpose flour - 1 3/4 cups
Butter - 3/4 cup
Grated lemon peel - 1 tsp
Sugar - 3/4 cup
Egg -1
Baking powder - 1 1/2 tsp
Salt - 1/4 tsp
Coriander powder - 1 tsp
Cardamom powder - 1/2 tsp
Red cherry jelly - 250 gms
Egg yolk - 1
Sugar - 1/4 cup
Water - 2 tsp
Toasted blanched almonds - 1/4 cup (finely chopped)

Method:

Cream butter with lemon peel. Add 3/4 cup sugar gradually, creaming thoroughly. Add egg and beat well.Blend flour, baking powder, salt, and spices; add to creamed mixture and mix well.Chill dough until easy to handle.On a floured surface, roll dough into a 12*8 " rectangle. Cut into 12 strips (1")Place strips 4" apart on greased cookie sheets; cookies will spread. Make a depression, 1/4" wide and 1/4" deep, lengthwise down the center of each strip. SWEET AND SOUR ONIONS

Ingredients:
Small onions - 450 gms
Olive oil - 2 tbsp
Cloves - 2
Bay leaf - 1
Salt
Vinegar - 2 tbsp
Sugar - 1 tbsp

Method:

Put the unpeeled onions into boiling water, and cook for 10 minutes.Peel them, and put into a pan with olive oil, cloves, bay leaf and salt. Simmer for 5 minutes.Add the vinegar and sugar, and cook until the sauce is syrupy.These onions may be served hot or cold.

CHINESE ALMOND COOKIES

Ingredients:
Blanched almonds - 2 1/2 cups
Sifted All purpose flour - 2 1/4 cups
Butter - 1 1/4 cup
Sugar - 1 1/4 cups

Method:

Finely chop 1 2/3 cups almonds; toast remaining almonds, if desired, and set aside for garnish.Mix flour and chopped almonds; set aside.Cream butter; add sugar gradually, beating thoroughly.Add flour mixture gradually, mixing until blended after each addition.Divide dough into three parts, wrap in waxed paper, and chill for one hour or until easy to handle.Shape dough into 1" balls; place about 2" apart on ungreased cookie sheets and flatten each until about 1/2" thick. press a whole almond onto the top of each.Bake at 325 F for 10-15 minutes.Immediately remove cookies to wire rack.

PULIHORA UPMA

Ingredients:
Rice rawa - 500 gms
Lemons - 4
Oil- 100 gms
Mustard seeds- 1 tsp
Urad dal - 1 tbsp
Channa dal - 1 tbsp
Asafoetida - small piece
Salt to taste
Turmeric -  1/4 tsp
Red chillies - 4
Green chillies - 4
Ginger - 1 tsp (grated)
Curry leaves - few

Method:

Boil one litre of water in vessel. Add 1 tbsp of oil and rice rawa.Mix  without lumps and  Cook in low flame for 5 minutes or until done.Remove and transfer to large plate.Heat oil in a pan, add broken red chillies, urad dal, channa dal, asafoetida, mustard seeds and curry leaves. Fry till mustard crackles.Add chopped green chillies and ginger. Remove and pour this over rawa.Add salt, lemon juice, turmeric to the rawa mixture.Mix gently and serve.

GREEN GARLIC SAUCE

Ingredients:
Green Chillies - 10
Garlic cloves - 10
Coriander leaves - 2 tbsp (chopped)
Lemon juice - 1/4 cup
Salt and pepper to taste
Sugar - 1/2 tsp

Method:

Finely chop green chillies and garlic cloves.Mix all the ingredients together in a mixing bowl.Close the lid and keep aside for one hour.Serve as dipping.
