YOGHURT AND RICE PUDDING

Ingredients:
Rice - 100 gms
Ghee - 1 tsp
Milk - 1 1/2 ltr
Sugar - 200 gms
Fresh, thick yoghurt - 250 gms
Vanilla essence - 1 tsp
Raisins - 10-12
Almonds Cashew nuts - 1 tbsp

Method:

  • Mix ghee into the rice and put it aside.
  • Bring it to boil the milk in thick vessel. When it comes to a boil, add rice. Keep stirring from time to time.
  • When rice is cooked, add the sugar; keep on stirring until the sugar is completely dissolved and the milk thickens considerably to a porridge like consistency.
  • Remove from flame and cool it to lukewarm.
  • Now mix yogurt thoroughly in it.
  • Add vanilla essence and refrigerate it.
  • Serve chilled in individual bowls,decorated with dry fruits
