CAYENNE PEPPER AND ORANGE CHICKEN WITH MIXED SALAD AND GRAPE TOMATOES

Ingredients:
Olive oil - 1/2 cup
Salt - 1 tsp
Garlic - 1 clove (crushed)
Cayenne pepper - 1/2 tsp
Dried oregano - 1 tbsp
Chicken breast fillets - 3 (quartered length-ways)
Mixed salad leaves - 4 cups
Grape tomatoes - 12 (halved)

Dressing:
Lemon juice - 1/2
Olive oil - 1/4 cup
Sea salt
Freshly cracked black pepper

Method:

  • Combine olive oil, salt, garlic, cayenne pepper and oregano; coat chicken with oil mixture. 
  • Cook for 3 minutes each side or until golden brown and cooked through. Divide salad leaves and tomatoes between four plates; top salad with chicken pieces.
  • For the dressing, combine lemon and olive oil; mix well then drizzle over the chicken and salad, then season.
