FIGS WITH RICOTTA CREAM

Ingredients:
Fresh ripe figs - 4
Ricotta or cottage cheese - 115 gms
Creme Fraiche - 45 ml
Clear honey - 1 tbsp
Vanilla essence - 1/2 tsp
Freshly grated nutmeg to decorate

Method:

  • Trim the stalks from the figs. Make four cuts through each fig from the stalk-end, cutting them almost through but leaving them joined at the base.
  • Place the figs on serving plates and ease the cuts apart gently to open them out.
  • Mix together ricotta or cottage cheese, creme fraiche, honey and vanilla essence.
  • Spoon a little ricotta cream onto each plate and sprinkle with grated nutmeg to serve.
